Kayianas (Eggs with Tomatoes)

3 portions

Ingredients:

  • 5 eggs
  • 5-6 big, ripe tomatoes
  • Feta (as much as you like)
  • 1 green pepper
  • olive oil
  • salt/pepper

Method:

  • Cut the tomatoes into small cubes and slice the peppers into strips
  • Put them in a pan with olive oil and let them cook until most of the water has evaporated but keep them extra juicy
  • Add some salt and pepper
  • Whisk the eggs in a bowl and add them to the tomatoes with some more olive oil and finish off with some more salt and pepper (and any other herb you’d like eg oregano)
  • Add the feta
  • Serve warm with bread (you can also add some raw olive oil on top)
