Ingredients:
- 5 eggs
- 5-6 big, ripe tomatoes
- Feta (as much as you like)
- 1 green pepper
- olive oil
- salt/pepper
Method:
- Cut the tomatoes into small cubes and slice the peppers into strips
- Put them in a pan with olive oil and let them cook until most of the water has evaporated but keep them extra juicy
- Add some salt and pepper
- Whisk the eggs in a bowl and add them to the tomatoes with some more olive oil and finish off with some more salt and pepper (and any other herb you’d like eg oregano)
- Add the feta
- Serve warm with bread (you can also add some raw olive oil on top)
