Gyros Manitarion (Mushroom gyros)

2 Portions

Ingredients:

  • 1 small onion (finely chopped)
  • 2 cloves of garlic (minced)
  • 1 green pepper
  • 1 red pepper
  • 500g oyster mushrooms OR wild mushrooms (chopped into small pieces)
  • 500g white mushrooms OR Portobello (chopped into small pieces) You can use any kind of mushrooms you like ;)
  • ½ tsp sweet paprika
  • ½ tsp oregano OR thyme
  • ½ tsp cumin
  • 150ml white wine (optional)
  • 2 tbsp mild mustard
  • juice from ½ lemon (or more)
  • 5-6 tbsp olive oil
  • salt & freshly ground pepper

Extra ingredients:

  • 1 tomato (thick slices)
  • 4 souvlaki pittas OR any kind of pitta bread
  • ½ onion (thinly sliced)
  • some Mayo OR Yoghurt / some mild Mustard (optional)
  • parsley (finely chopped)
  • 150g yellow cheese (that melts like Gouda etc)

Method

  • We’ll start with the gyros. Place a frying pan over high heat until it gets very hot
  • Add the olive oil and when it’s hot add the onions, the green & red peppers and saute’ on medium to high heat for 3-4 minutes
  • Add the mushrooms, the salt & pepper and continue to saute’ over high heat for 7-8 minutes mixing continuously so that all the flavors can blend while the mushrooms cook
  • Add the garlic, the sweet paprika, the oregano/thyme and the cumin and saute’ for 1-2 minutes
  • Deglaze with the wine (if you’ve used it) and once it’s evaporated, add the lemon juice —– If you didn’t use the wine just proceed with the lemon juice (while the heat is high)
  • Remove from the heat
  • Now, if you’ve decided to make it with the pittas :

  • Preheat the oven 200C
  • Put a piece of baking paper in a baking pan, place the tomato slices, season them with salt & pepper, pour some olive oil and let them grill for 10 minutes
  • Put a piece of baking paper in another baking pan (or use the same when the tomatoes are done), place the pittas, pour some olive oil, put some mayo/yoghurt on the 2 pittas and some mustard on the other 2. Then divide the mushroom gyros, put the tomatoes, the onion, the cheese and cover them both - like 2 big burgers :) Put a little bit of olive oil and grill 200C for 15 minutes
  • Cut each pitta into 4 and enjoy!

You can also use a pitta pocket especially for Lukas ;)
