Briam

Ingredients:

  • aubergines
  • zucchini
  • carrots
  • onions
  • garlic (quite a few cloves)
  • green & red peppers
  • 400g canned tomatoes
  • tomato paste
  • olive oil - don’t be stingy there ;)
  • parsley (at least 1 bunch)
  • salt & pepper
  • leek (optional)
  • potatoes not an option ;)

Method

  • Chop all the vegetables and place them in the baking pan, add the tomato paste the canned tomatoes and the parsley
  • Preheat the oven and use plenty of olive oil
  • You might need to add some water while it’s baking (especially if you use potatoes for the rest of the family)
  • Serve with feta (or any other cheese)
