Ingredients:
- aubergines
- zucchini
- carrots
- onions
- garlic (quite a few cloves)
- green & red peppers
- 400g canned tomatoes
- tomato paste
- olive oil - don’t be stingy there ;)
- parsley (at least 1 bunch)
- salt & pepper
- leek (optional)
- potatoes not an option ;)
Method
- Chop all the vegetables and place them in the baking pan, add the tomato paste the canned tomatoes and the parsley
- Preheat the oven and use plenty of olive oil
- You might need to add some water while it’s baking (especially if you use potatoes for the rest of the family)
- Serve with feta (or any other cheese)
