Tyropita without phyllo dough

There are 2 recipes here! They’re both good so try them both :)

According to Macrobiotic Nutritionist and Health Coach Shilpa Arora, “Amaranth, buckwheat and ragi are the best flours to use in case you are a diabetic (especially type 1). Attafrom these flours is low in carbohydrate content that makes it effective to maintain blood sugar level. Other alternatives are Almond flour,coconut,chickpea,oat and spelt flour. Another alternative for you would be: Allow your protein bread to become a bit stale and then grind it into bread crumbs. Use it either as flour (in this case you’d have to grind it finely eg.in a blender) or use your hands to make it breadcrumbs and use it as toast (eg. sprinkle it over the tyropita) – we use stale bread very often in Greece!

You will need some kind of flour for the tyropita so you can experiment and decide which one’s best for you. Καλή επιτυχία!

1.) Ingredients:

  • 500g feta (cut into small pieces eg. by hand)
  • 5 eggs
  • 200g yoghurt
  • 1 cup sunflower oil
  • 1 glass fresh milk
  • 5 spring onions (thinly chopped)
  • ½ bunch dill
  • freshly ground pepper
  • 500g flour (preferably sieved)
  • ½ cup breadcrumbs
  • olive oil for the pan

Method:

  • Whisk the eggs in a bowl
  • Add the yoghurt, the sunflower oil and the milk
  • Add pepper
  • Add the dill, the spring onions and the feta
  • Using a sieve, sieve the flour into the mixture and stir with your hand or a large spoon
  • Grease (with the olive oil) a baking pan 34/36 cm and sprinkle half of the breadcrumbs
  • Pour in the mixture
  • Use a spoon to even it out
  • Sprinkle the rest of the bread crumbs
  • Bake in a preheated oven 170C for 50 minutes (until brown)

2.) Ingredients:

  • ½ kilo feta crumbles (cut into small pieces eg. by hand)
  • ½ kilo other, yellow cheese, your choice (OPTIONAL)
  • 4-5 eggs
  • 1 glass of milk (optional)
  • 200g yoghurt
  • 1 cup corn oil or sunflower oil OR 250g butter
  • 1 cup flour
  • spearmint
  • freshly ground pepper

Method:

The method is more or less the same as tyropita 1 ;)

Tips

Υou could also try the recipe adding spinach (spanakopita). I have never made it but you can experiment a bit and see..
