Salad with blue cheese / Roquefort

Portion: 1

Ingredients

  • 150-200g lettuce (or whatever green salad you like)
  • 150g (cherry) tomatoes
  • 70-100g blue cheese
  • 30g bread (your soft protein bread) cut into cubes (for the croutons)
  • 1 tsp olive oil (for the croutons)
  • ½ clove of garlic – cut in slices (for the croutons)

For the Dressing:

  • 2 tsp (or more) olive oil
  • 2 tsp balsamic vinegar (preferably not cream)
  • 2 tsp condensed milk (I use a bit more)
  • 1 tsp mustard
  • ½ tsp sugar (optional)
  • ¼ clove of garlic (crushed for the dressing)
  • salt & pepper

Method

  • Put all your ingredients for the dressing in a jar (or blender) and shake well
  • Place your salad in a large bowl

For the croutons:

  • Place the frying pan on high heat
  • Add the olive oil, lower the temperature to medium heat, add the garlic, let it fry for a moment and then add the bread and fry it until it’s brownish and crispy (then remove the garlic)

  • Pour the dressing onto the salad, add the croutons and enjoy!

PS: I hope you like blue cheese. If not I guess you can try another similar cheese (fatty) and experiment!
