Manitaria Fricasse (Mushroom fricasse)

Ingredients:

  • 1 kilo mushrooms (any kind)
  • 1 large onion
  • 2-3 bunches of spring onions
  • 500 gr lettuce (you can combine it with spinach or other greens)
  • olive oil
  • 5-6 tbsp dill
  • vegetable broth (1 cube maggie etc)
  • 2 eggs
  • lemon
  • salt/pepper (preferably freshly ground)

Method:

  • Clean/Peel the mushrooms and chop into pieces (not too small)
  • Wash and chop the onion, the spring onions and the lettuce
  • Using a wide pot, saute the onions in the oil until soft. Add the mushrooms and continue to saute until most of the water from the mushrooms evaporates
  • Add the lettuce, the dill, salt, pepper and the vegetable broth/cube & ½ cup warm water (you might need to add some water)
  • Lower the heat, cover the pot with a lid and allow to simmer for about 15 minutes till the vegetables are done but leave some water in
  • Remove from the heat while making avgolemono (egg & lemon sauce)
  • Pour the sauce slowly into the pot, stir and remove from the heat

Tips

You can substitute the mushrooms with chicken or any other kind of meat in this recipe. You can also add some rice in the fricasse (before the avgolemono) for Luki & Kai.
